Wild Rice Pilaf is one of my favorite side dishes, packed with layers of texture and flavor! The sweet onion in this recipe gives it impact, while the toasted almonds add crunch, and the cranberries give it some sweetness. I love serving this with soy glazed salmon or roasted whole chicken! Of course, don't forget the wine! ;)

Wild Rice Pilaf
Prep Time: About 45 mins (includes wild rice prep)
Inactive Time: 45 mins
Cook Time: About 10 mins
Total Time: 45-55 mins
Yield: 4 large servings
What You'll Need:
2 & 1/2 cups prepared wild rice
3 Tbsp butter
1/4 c slivered almonds
1/4 c sweet onion, chopped
1/4 c dried cranberries
pinch kosher salt
pinch pepper
How to Prepare :
Prepare wild rice according to package directions.
In a small sauté pan, add slivered almonds over low heat, and toss occasionally until fragrant and lightly toasted (5-7 mins). Set aside.
In large sauté pan, add your cooked wild rice with 2 Tbsp butter over medium low heat, and toss.
Add in sweet onion, slivered almonds and dried cranberries, along w/ a pinch of kosher salt and pepper, and stir about 5 mins until onions are tender and flavors are well combined.
Reduce heat to low, and add another tbsp butter, toss another 2 mins, then taste for seasoning. Add another pinch of salt if needed. Serve aside your favorite protein (goes great with salmon or chicken).

I LOVE wild rice pilaf! There are so many ways to play around with it, and it can be made from a plethora of ingredients that are more than likely in your pantry. I've added celery, garlic, sage, etc., in the past, and it has always been a treat! This wild rice pilaf recipe however, is a simple way to jazz up some rice and give it layers of flavor, with just a few things on hand--slivered almonds, cranberries and sweet onion!
