Turkey, Pesto & Swiss Sandwich Recipe
Prep Time: 15 mins
Inactive Time: 5-10 mins
Total Time: 20-25 mins
Yield: 6 sammies
What You'll Need:
Focaccia bread, 7 oz slab
8 slices good turkey deli meat
6 pieces bacon, broken into bite size pieces
1/3 c mayo
1 Tbsp prepared pesto
Swiss cheese (5 slices used in video)
handful red onion, sliced into bite size pieces
handful baby tomatoes, quartered
pinch pepper
1 heaping cup baby arugula
juice of one lemon wedge
pinch finishing salt, such as fleur de sel
drizzle of olive oil
How to Prepare :
Preheat oven to 400. Place bacon on sheet pan lined w/ foil and bake for 12-15 mins, or until perfectly crispy. Move to paper towel lined plate, then set aside.
Reduce oven 350.
Combine mayo and pesto in a bowl and mix to combine. Set aside.
Slice focaccia slab in half through center, then place open-faced on a large sheet pan, and drizzle each side with olive oil (as shown in video).
Top one side of bread with pesto mayo, spreading around to cover.
Pile other side with turkey, bacon pieces, cheese, onions, tomatoes, and a pinch of pepper.
Bake open faced for 5-7 mins until cheese is completely melted.
Combine arugula in bowl and top with a squeeze of lemon juice, pinch of finishing salt, and toss.
Pile pesto/mayo side of bread with arugula and form your giant sandwich. You may opt to pad the top of the bread with a paper towel due to the leaking oils of the bread during baking.
Slice down center, and crosswise twice to yield 6 sandwiches. Serve immediately and enjoy!
I made these Turkey, Pesto & Swiss Sandwiches for my girlfriends one weekend during a trip to the North Shore. The girls LOVED them, and they were a perfect way for us to wrap up the afternoon and settle into the evening!
