Sautéed Broccolini & Peppers

This sautéed broccolini and peppers serve as a light, vibrant and healthy side dish to enjoy aside your favorite protein, and is done in only a matter of minutes!

Sautéed Broccolini & Peppers

Prep Time: About 5 mins

Cook Time: 10 mins

Total Time: About 15 mins

Yield: 4 servings


What You'll Need:

  • medium sauce pan

  • sauté or cast iron pan

  • medium bowl with ice

  • 2 Tbsp butter, divided

  • 1 bunch broccolini (about 6-8 oz), ends trimmed and large stalks sliced in half lengthwise

  • 1 medium bell pepper, sliced

  • juice of 1/2 lemon (about 1 & 1/2 Tbsp)

  • 1 Tbsp olive oil

  • a few pinches kosher salt

  • a few pinches pepper

  • pinch paprika

  • 3 cloves garlic, minced

  • 1 sprig fresh thyme (1/2 tsp)

  • lemon slices, for garnish


How to Prepare:


  1. Combine lemon juice, olive oil, tiny pinch kosher salt, paprika, minced garlic and fresh thyme in a small bowl and mix to combine. Set aside.

  2. Prepare saucepan with water, and bring to boil. Submerge your broccolini, and boil 2 minutes until bright green and slightly tender. Strain and submerge in ice bath immediately to stop cooking.

  3. Heat a Tbsp butter in cast iron or sauté pan over medium heat, then add broccolini, season with a pinch of kosher salt and pepper, and toss two minutes, then move to plate and set aside.

  4. Add another Tbsp butter to pan, reduce heat to medium low, then add bell pepper, season w/ a pinch of kosher salt and pepper, and sauté for about 3 minutes, then set aside with broccolini.

  5. Reduce heat to low, add sauce to pan, swirl around for about 30 seconds to slightly cook garlic, then add all veggies back to pan, tossing around for a final minute. Taste test veggies for seasoning and adjust as needed.

  6. Move all veggies to plate, and scoop all sauce and garlic out, topping on veggies.

  7. Increase heat to medium and add lemon slices, sear about 1 minute/side, then plate with veggies for garnish and serve immediately.

  8. Enjoy!
