I don't know why this salad is so underrated, it is honestly one of my faves! So easy to elevate with different meat toppings for a total, filling and satisfying meal! Don't forget to serve it with my homemade blue cheese dressing, I promise you won't regret it! ;)

Classic Wedge Salad
Prep Time: 15 mins
Total Time: About 15 mins
Yield: 4 Salads
What You'll Need:
1 head iceberg lettuce, cut into quarters
4 slices bacon, crispy
1 heaping cup cherry tomato medley, cut into quarters
2 avocados, sliced
4 eggs, hard boiled
A few generous drizzles homemade blue cheese dressing
pinch finishing salt, such as fleur de sel, optional
How to Prepare:
Preheat oven to 400.
Line baking sheet with foil and place bacon on it. Pop in the oven for 12-15 mins until crispy. (You can prepare eggs during this time, see step 3). Place bacon on paper towel lined plate to absorb grease, then chop or crumble with clean hands. Set aside.
Place eggs in a medium saucepan, and fill with just enough cold water to cover eggs. Bring to boil. Boil 5 mins, then shut off heat and let eggs sit 5 mins more. Drain and flush in cold water, peel, slice and set aside.
Take each quartered wedge (you may opt to take a slight slice off the rounded edge of the back so it lays "flat"), place face up on a plate, and top each with 1/4 c tomato medley, a few tbsp of crumbled bacon (1 slice), 1/2 sliced avocado, and 1 sliced hardboiled egg. Top with a few generous spoonfuls of my homemade blue cheese dressing (post under salads tab), and a pinch of finishing salt if desired.

Wedge Salad has to be one of the most filling and satisfying salads! Enjoy for lunch, or as a side with dinner any day of the week! Turn it up a notch with shredded bbq pulled pork and a drizzle of bbq sauce in the dressing, or shredded buffalo chicken! Yum!
