Egg salad doesn't have to be boring, mashed eggs with mayo and mustard on standard sandwich bread. It's easy to jazz up in just as little of time with barely any effort!

Cafe Inspired Egg Salad Sandwich
Prep Time: 15 mins
Total Time: About 15 mins
Yield: Makes 2 sandwiches
What You'll Need:
medium saucepan
2 eggs
2 buttery croissants
softened butter, for croissants
2 Tbsp mayo
1 heaping tsp dijon mustard
pinch kosher salt
pinch pepper
pinch paprika
pinch garlic powder
1 tbsp chives
handful of spring mix
juice of 1 fresh lemon wedge
a few thin slices fresh tomato
How to Prepare:
Add your eggs to a small saucepan and fill with cold water, just enough to cover. Bring to boil, let boil for 5 minutes, then turn off the heat, let sit another 5 minutes, then flush in cold water and set aside a few mins to cool. *While eggs are boiling is when I prepare my other ingredients.
Combine mayo in small bowl with mustard, paprika, garlic powder, chives and mix to make a "dijonnaise." Keep aside.
Put spring mix in a bowl and squeeze your lemon wedge on top, and give a light toss with your hand. Keep aside.
Toast and butter your croissant(s) and set aside on plate.
Once eggs are cooled, peel them, add into a bowl and roughly slice into bite size chunks (don't mush), then add a pinch of kosher salt and pepper on top.
Pour your dijonnaise on top of your seasoned eggs and mix to combine.
Take your toasted, buttered croissant(s) and pile all of your goodies on: egg salad, spring mix, tomato slices.
